1.- ANDALUSIAN GAZPACHO
The famous refreshing vegetable soup from Spain
Ingredients for 4 people
- 1/2 kg of ripe TOMATOES
- 1/2 kg of green pepper
- 1/4 kg of red pepper (optional)
- 1/4 kg of onion (optional)
- 1 clove garlic
- A half cucumber
- 150 ml of water
- 50 ml Extra Virgin Olive Oil
- 4 tablespoons sherry vinegar
- 1 tablespoon cumin (spice)
- 1 slice of white bread (or more if you like it thicker)
- Salt
How do we prepare it?
First, we must wash the tomatoes well, and then peel them and chop them into smaller pieces, we also cut to pieces the cucumber, the onion, the garlic and the peppers
We mix everything in a bowl and beat it using a blender until the texture is like a thick soup, then add the bread and water along with the vinegar, cumin and salt, if we have too much liquid left we can add more bread.
Finally, we include Puerta De Las Villas Early Extra Virgin Olive Oil in the amount we want to provide a more elegant and traditional touch to this Andalusian dish.
Keep into the fridge for at least 2 hours before serving …and enjoy!!
