"Special Edition" EARLY HARVEST OLIVE OIL 500 ml

"Authentic masterpiece for the most demanding palates"

A selection of the best early harvest olive oil at our cellar, this oil is "our greatest treasure". The design is inspired by the Iberian Treasure of Mogón and the background colour of the bottle portrays the image of the course of the Guadalquivir river through the town of Mogón.

This oil is produced from olives of the Picual variety, harvested in mid to late October from olive groves that are cultivated under the integrated production system, located in Sierra de las Villas.

It is highly complex on the nose.

It has a smooth entry on the palate, with plenty of character, and presents great harmony with the notes perceived on the nose, along with slight bitterness which is offset by its spicy tones. Lingering and well-structured, with an intense fruity taste of fresh olives, and a great complexity of herbal and fruity aromas, especially green tomatoes, almonds and green bananas. Slight astringent finish on the palate, evoking artichokes and accentuating the green aromas in perfect harmony with its olfactory profile.

This olive oil has a lingering aftertaste and great harmony.

When eaten raw it is ideal for toast, crostini, gourmet dishes, mixed and tomato-based salads, meat, oily fish and special dishes.

This oil is produced from olives of the Picual variety, harvested in late October from olive groves that are cultivated under the integrated production system, located in Sierra de las Villas.

It has a fruity green taste of fresh, clean and fragrant olives.

Hints of tomato plant, artichoke, green wheat and banana peel can be appreciated on the nose, along with aromatic herbs to a lesser extent.

There are crisp notes of freshly cut grass both on the nose and on the palate, resulting in a minty sensation in the mouth. This sensation is perfectly balanced with the "green" almond taste, and both notes linger as a reminder of the latter.

When eaten raw it is ideal for toast, crostini, gourmet dishes, mixed and tomato-based salads, meat, oily fish and special dishes.

This oil is produced from olives of the Picual variety during the colouration stage, harvested in the first half of November from olive groves that are cultivated under the integrated production system, primarily located in Sierra de las Villas.

This oil has a predominantly green leaf fruity taste, of medium-high intensity, with slight ripe tones and hints of tomato, fig leaves, artichoke and medium bitterness and spiciness.

Pairing: Fruity ripe olive oil which is ideal for salads and toast.

This oil is produced from olives of the Picual variety, harvested in November from olive groves that are cultivated under the integrated production system, primarily located in Sierra de las Villas.

This olive oil has a fruity ripe taste of medium intensity, with hints of tomato, fig leaves, olive leaves and artichoke.  It is of medium bitterness and spiciness on the palate, characteristic of the Picual variety.

Pairing: Ideal for all types of cuisine and dishes. It can be used both for salads and gazpacho, and for pasta, soups, meat, stews and even for frying. It is ideal if you want to enhance the flavour of your dishes.
